We have been brewing away on the pilot brewery and have 5 one-off beers on the way to our mates at The Taphouse, Darlinghurst for our tap takeover!
Come and join us to kick off our 10-year anniversary celebration and commemorate 10 years of beers with a Q&A featuring one of our brewers and some delicious super limited Pilot Batch brews.
Come and treat your taste buds to releases only available in our Byron tasting room and get excited about some new things to come…These brews will be matched with delicious canapes to get your mouthwatering.
Attendance is free, vibe is chill and good times are guaranteed.

Dark ‘N’ Northerly (6.5% ABV)
A gorgeous copper hue sitting under a zesty aroma of lime, ginger and mint, this amber ale has been created to remind us of one of our favourite cocktails, the Dark N’ Stormy. Half a kilo of mint was added into the whirlpool, keeping it summery and refreshing. We then added a kilo of hand-picked fresh ginger. That, along with the zest and juice of 30 limes, was dry-hopped into the fermenter. Half-way through the ferment, we settled our brew into a rum barrel to soak up further colour, flavour and aroma.
Dunkelweizen (5.5% ABV)
Similar to a Hefeweizen, our Dunkelweizen (‘Dunkel’ meaning dark) has a hazy and rich amber appearance yet offers the same distinct phenolic aromas of clove and banana. On the palate, the wheat and Munich malt base softens the flavour by offering hints of toffee and slight hazelnut. Finishing smooth and dry.
Mussel Beach Blonde (6.3% ABV)
Our Belgian Blonde is a flavourful morsel which pours straw gold in colour and with a thick, creamy, off-white head. This medium-bodied typically yeast-driven wheat beer is offset by the additions of fresh local mussels, kaffir lime and bundles of lemongrass. Floral and fragrant on the nose, silky on the palette, and finishing slightly salty, crisp, zesty and refreshing, this distinct ale will be snapped up quickly.
SWX – Barrel Aged Imperial Stout (10% ABV)
To commemorate ‘10 Years of Beers’ for Stone & Wood we wanted to brew something special to mark the occasion. SWX is a decadent 10% imperial stout, which was barrel aged for 10 months.
SWX pours jet black with a chocolate head and features incredible depth of malt flavours and aromas of espresso, cocoa and dark fruits. The stout was matured in seasoned fortified wine barrels, which enhance the smooth, rich, flavours and aroma of oak while providing hints of cherries and chocolate. SWX is assertive and refined with a warming palate that is full-bodied but balanced by a firm bitterness.
A spectacularly big, complex and delightful brew that celebrates our journey so far and the adventures yet to come.
Session IPA (4.9% ABV)
Sitting super hazy in glass, with galactic additions of Galaxy hop, this session IPA storms your senses with tropical fruit aroma much like its predecessors The Prequel and Pacific Ale. Backed up by a clean pale malt base with generous hop additions in the kettle, whirlpool, and dry-hop, this IPA is punchy, fruity and finishes dry with a lingering bitterness.
