Date brewed: December 2022.
Aged in: Ex Chardonnay and Whisky Barrels.
General description: Infused with pureed black cherries, this Farmhouse Ale has been resting since December 2022 in ex Chardonnay barrels that were then used to house Whiskey, before our Saison. This complex beauty delivers peppery and fruity esters, with a subtle funk, and juicy cherry and bold oak notes. Pouring rich jam red with a hazy finish.
Hops description: EKG were used for both bittering and as a late boil addition, but most of the hop character has faded during the aging process.
Malt description: we brewed with Ale, Pilsner, Vienna and Munich malts.
Yeast description: farmhouse/Saison style yeast.
Standard drink equivalent: 2.9 per 375ml bottle.
Food pairing: this style Saison would pair well Asian inspired dishes as well as a nice charcuterie board focusing on French-style blue cheeses.
