International can of mystery - Wayne Dubois - recently fell into the hands of the Counter Culture Lab where they transformed him into an intriguing hybrid of French sophistication and Australian good times – a sparkling shiraz sour.
In a process of mixed fermentation madness, they took the finest Australian pale and wheat malts and Tettnang hops and combined it with a selected Shiraz yeast strain and lactobacillus transforming him into a soft and refreshing presence.
Sour by name, not by reputation, Wayne casts a ruby hue and fills the air with scents of berry and white pepper. Vanillin and coconut make him a well-balanced treat, but it was his time spent among the American oak that will really stay with you.
Released back into the world by Counter Culture to do their bidding only for a brief time, there are few who can resist a night with Wayne Dubois.
