Stone Brew Day: The making of Stone Beer 2026

Stone Beer is back! Brewed using one of brewing's oldest traditions, Stone Beer 2026 is a rich porter made with wood-fired stones, delivering layers of roasted malt, dark chocolate, coffee and subtle smoke.

In mid May, we gathered in the brewery for one of our favourite annual rituals: Stone Brew Day. Heated over a wood fire before being lowered into the brew, the stones caramelise the malt, creating the rich, distinctive flavour that makes Stone Beer what it is.

Brewed just once a year and worth the wait. Stone Beer is available soon online, in our Byron Bay Tasting Room and at select bottle shops.

When Brewer Meets Farmer

Dark 'N' Northerly – our latest Pilot Batch, with the help of our friends at The Farm

There’s this incredibly satisfying feeling that comes from knowing you grew something yourself. The time, effort, patience and hope all contribute to that moment of seeing, then enjoying the fruits of your labour – wholesome food that is nourishing and real.

Those hours spent, back hunched, preparing and planting are in the hope that the dirty residue left under your nails and the pulsating ant bites are all worth it in the end…

 This time last year, our team spent a humid spring morning planting ginger with the legends from The Farm. The northerly wind was already up by the time we plunged our ginger filled hands into the rich red soil. As you look out across The Farm’s fields, there are heritage-breed pigs, Scottish Highland cattle and chickens, all of which roam freely and are used for meat and eggs in the on-site restaurant Three Blue Ducks, cafe and produce store, along with the lush green veggies (and vibrant sunflowers). They use sustainable farming practices and their goal is to grow, feed and educate.

They had for some time been keen to use ginger they’d grown in a beer, so we thought why not?! Ginger grows abundantly in the Northern Rivers and there wouldn’t be a basket at the farmers markets that doesn’t have a bulb.

So with the ginger harvested, our head brewer Caolan and the team came up with an amber ale that reminds quite a few of us of one of our favourite late night cocktails, the Dark N’ Stormy….

With a gorgeous copper hue and a zesty aroma of lime, ginger and mint, this amber ale is summery and refreshing, having had half a kilo of mint added into the whirlpool. We then added a kilo of our own grown ginger. That, along with the zest and juice of 30 limes, was dry-hopped into the fermenter. Half-way through the ferment, we settled our brew into a Husk distillery rum barrel to soak up further colour, flavour and aroma. All this contributing towards a finishing mouthfeel that is light, tangy and will keep your warm for a breezy sunset at The Wreck.

We only brewed a handful of kegs which will be staying in our Byron tasting room, so if you’re around town drop in over the next few days for a try!

Now Pouring: Sticky Nectar - Hazy Mango IPA

STICKY NECTAR – HAZY MANGO IPA

Throughout the year we release Pilot Batch brews that are special, limited, and once gone, they may never return. It’s a space for our brewers to get creative, an opportunity to trial weird and wonderful things… an experimental playground to get a little fruity.

Normally these one off brews are poured only in our tasting room, and drinkers outside our backyard are left thirsty. We’re excited to announce that this limited release will be pouring from taps along the east coast of Australia from today onwards.

Introducing Sticky Nectar…

We’re ready for longer days…fresh mango juice dripping off your chin as you sit on the back deck in the warm sun. Our Sticky Nectar is a delicious IPA brewed with lactose and truckloads of fresh mango and pours with a golden haze. Hop additions of Galaxy, Citra and Amarillo enhance the tropical fruit aromas, while providing firm bitterness that is balanced with a smooth and creamy mouthfeel and that finishes medium bodied.

Good Beer Talk: Coffee Milk Stout

We want to get the good beer chat flowing and your mouth salivating. In our latest blog series Good Beer Talk, our beer experts will be discussing tasting notes, history and what goes into our beer of the month. It’s not always what we have in the tanks or taps but beer styles handpicked by our brewers that we really love.

This month our beer of choice is a coffee milk stout…

Milk Stout or Sweet Stout, is an English style of stout developed in the early 1900s. The name ‘milk’ stout comes from this style of beer using lactose, or milk sugars, as a sweetner. Traditionally, it’s dark brown to black in colour, with a nice creamy tan head. Flavours of dark roasted malts offer coffee, and aromas of chocolate. It offers low hop bitterness, and the silky sweetness from the lactose is balanced by roasted flavours.

This beer was originally marketed to breast-feeding mothers as it was suggested to promote breast milk production.  All of the polysaccharides (natural complex sugars) of this malted barley-heavy beer stimulate the secretion of prolactin, which is the hormone responsible for breast milk production (lacto-genesis).

For this Pilot Batch milk stout, we selected a complex medium roast coffee and added this to the brew, along with milk sugar and organic vanilla bean. These additions play beautifully with the dark malt bill, resulting in a beer that is bittersweet on the palate with a silky mouthfeel and roasted coffee finish. A beer for coffee & cake lovers!

On The Road To Munich: A 10 Day Beer Journey

A beer soaked trip of a lifetime visiting Euro village breweries and hop fields...

Each year, we take our crew who’ve been with us for 5 years on a beer pilgrimage called “The Road to Munich”. A 10 day journey through Belgium, Germany and Austria visiting Euro village breweries and hop fields trying a whole lot of awesome beers and good food along the way. The pilgrimage has come to a finish in Munich and our lucky pilgrims rich with good beer stories and laughs from their travels are making their way back to the motherland…See their adventure here.

We want to hear the tales of our pilgrims and get their take on the beery wonderland that is “The Road to Munich”. Stone & Wood Ambassador and all round good guy Viren Goundrie was one of the lucky crew to do the journey last year. Here’s some words by Viren on his experience during last year’s “The Road to Munich”.

On completion of 5 years service at Stone & Wood, each staff member is invited to join our founders Ross, Brad and Jamie on a beer journey to the heart of good beer, “The Road To Munich”. This beer soaked trip of a lifetime takes in London, Brussels, Dusseldorf, Cologne, Bamburg, Tettnang and finally Munich.

Last year’s pilgrims included; Hugh Doyle; Stone & Wood’s roadcrew maestro in Brisbane, Luke Rutland; fermentation guru for Granite Belt Cider and Bucha of Byron, and myself (Viren Goundrie; Stone & Wood Ambassador). We were also joined by Anthony Cook (Jamie’s son) who had recently completed his brewing studies in Germany.

All seven of us met in London and headed to Brussels via the Eurostar. Belgium brewing history is long and proud with beers featuring yeasty phenolics, high levels of alcohol and sweetness. Straight off the train we visited Cantillon a working museum brewery making the world’s most celebrated Lambic (spontaneous fermented) beers, sour is the name of their game. We also visited Brasserie De La Senne, a local craft brewery offering beers on the drier, hoppier and lower alcohol end of the spectrum. La Senne sells more than half of their beer just in the city of Brussels.

From Brussels we trained it again to Dusseldorf in north Western Germany. Dusseldorf specialises in just one beer – Alt. This brown, malt forward beer is delicious and part of the inspiration behind our original Jasper Ale. Visits to two Alt breweries; Schumacher and Uerige allowed us to witness some ancient brewing techniques in use including; open fermenters, open wort exchange, wort cooler and cool ship (even Brad got excited!). Uerige sells more than half of their production through their restaurant.

Next stop Cologne, another Uni beer city; Kolsch. This wonderful, light, easy drinking beer is served in the brewery restaurants by grumpy (mostly male) wait staff continuously until you cover your thin science beaker like glass with coaster. It was fascinating to smell and taste how each brewery had their own flavour DNA, a uniqueness amongst homogenous beer.

Bamburg is famous for 3 things; a World Heritage Listed old town, Rauchbier (smokey, bacon like beer) and Weyermann Maltings. We stayed in the middle of old town and sampled many a Rauchbier, memorably one deep down in the ancient cellar at Schlenkerla brewery. We toured the Maltings, helped make a beer and had lunch with the Weyermann family. Our time in Bamburg allows Stone & Wood to bring the family wheel to life by nurturing long term relationships (suppliers as partners).

Tettnang is a hop that we use in Green Coast Lager, it is also a lovely little village in Germany surrounded by hop gardens. We visited a local hop farm with a young energetic owner named Lucas. Here we witnessed the harvest/processing, helped make a beer and sampled the finished product. Tettnanger brewery was our home for a few nights, a multi-generational business run by Fritz and Fritz (father and son), involving the entire family day and night. Fritz junior explained the struggles that this village brewery has faced throughout the years and how he sees the future (it looks bright and modern).

On the final leg of the journey we took every back road we could find and not far from Munch we stopped at Kloster Andechs, a monastic brewery where Monks have been making fantastic beers for hundreds of years. We rolled into Munich along the Autobahn regularly being overtaken by speeding drivers.

We Rode bicycles through the city stopping regularly to sample beer in the massive beer gardens and breweries. Helles Lager (what Green Coast Lager has been styled off), Dunkel (dark Lager) and Weizen (wheat beer) all tasted sensational. The king of all the local breweries is Augustiner where not only did we eat and drink at several times but thanks to Brad’s connections were lucky enough to receive a tour of their brewery (no one ever gets to do this!).

Each brewery we visited is an integral part of life in the towns and cities where it resides. The breweries provide jobs, a place for people to socialise, eat and sleep. The communities are proud of their breweries and the breweries support their community as they have for hundreds of years. This symbiotic relationship between community and brewery is inspiring.

On the Road To Munich we visited some amazing towns, ate some amazing food and drank some even more amazing beers. On behalf of Hugh and Luke, I would like to thank Ross, Brad and Jamie for memories that will last a lifetime.

Stone & Wood to establish a presence in Brisbane

There is something brewing in Brisbane...

For some years we have been looking at establishing a Brisbane outpost, a place for our loyal fans to visit and somewhere for our Brisbane based team to call home.

With the new brewery project in Byron Bay coming to a close over the next few months, we now think the time is right to take the step of bringing our take on a brewery experience to Brisbane.

The venue is located in Fortitude Valley and will house a small brewery to be used for brewing a rotating range of beers for on site consumption in the tasting room. It will also incorporate an event space and provide offices and storage for our Brisbane crew.

A big part of what we do in our existing Byron Bay tasting room is centred around education and developing people’s appreciation for good beer. We believe we can add value to the emerging good beer scene in Brisbane and continue to grow the market by adding our beer experience into the mix.

We have found a great space in a building with a heritage overlay, and we’re looking forward to letting our team loose to give it a new lease of life in a very Stone & Wood way.

It’s early days for us, and it’s always difficult to put time lines on these sorts of projects, but we would hope to be opening the doors in early in 2019.

After the overwhelming response to the release of The Prequel earlier this year, we have decided to bring it back for round 3. From today Aug 14th, venues along the east coast of Australia will start pouring The Prequel – The father of the Pacific Ale that never was….

We’ve been brewing hazy beers and using the Galaxy hop for close to ten years now. The Prequel was brewed in celebration of Galaxy, so for this brew, we used bucket-loads of them!

The Prequel is an ultra-dry-hopped Australian style ale that pours hazy gold and full strength. It has more than 25 times the number of galaxy hops than Pacific Ale, 99.5% of which was added into the whirlpool for maximum flavour and aroma.
The copious additions of Galaxy hops offer powerful aromas of passionfruit, pineapple, mango and citrus. Its bold hop character is refreshingly balanced by a low bitterness, finishing dry and crisp…

Our New Spiritual Home Is Taking Shape...

Stone & Wood Byron Bay Brewery update...

Our new spiritual home is taking shape!
If you’ve driven down Ewingsdale Rd in Byron Bay over the last couple of months, you would have seen the skeleton of our new brewery being built. Our construction team have been busy laying the foundations and building the frame of the new brewery and over the next couple of days, we’ll be craning the roof on.

We’re relocating our spiritual home from Boronia Place which is situated just around the corner. The purpose-built brewery and office space designed by Harley Graham Architects is to provide a higher quality experience.

We will not be increasing production at our new site…For us, it’s about being able to bring everything back under one roof – brewing, tasting room and office spaces.

For the project, we’ve made a conscious choice to work with as many local suppliers as possible. Our builder AGS Commercial is a family owned company based in Lismore who will be bringing local architect Harley Graham’s designs to life, whilst Andy Ceglinski from Wooden Anchor is looking after sourcing reclaimed and sustainable timber for the build including Camphor laurel.

We’re pumped to continue investing in our local community, and look forward to sharing more exciting news about the project as development progresses. Stay tuned!

If you were to graph a drinker’s growing love of good beer, their interest in the quality of that beer would be directly proportional. That’s because quality matters!

With you in mind, we’ve started stamping the ‘Packed Date’ (PKD), in addition to the ‘Best Before Date’ (BBD) on our bottles. With different breweries using different time frames for BBD and the rising interest in seeking out fresh beer, we’re keen to provide transparency.

The PKD stamp is one small step of many that we take to ensure our drinkers and customers are receiving our beer in the best condition and the information is accessible. From raw materials to final finished goods, we do rigorous testing with over 300 touch-points to monitory quality inside the brewery. We also do ongoing sensory testing. By regularly tasting the beers in sensory sessions (and Friday knock-offs!) we are able to monitor how the beer is handling the ageing process from PKD to BBD.

Beyond our brewery walls, our focus on quality continues by actively managing stock in trade by partnering with logistics partners, wholesalers and customers. We also have a sales team and national trade technician who regularly hold quality training sessions and are educated on how to trouble shoot in venues.

Through our testing and monitoring processes, we are confident and proud to stand behind our beers, knowing that those within that date range are fresh and tasting good.

For us, quality is key and we’re hopeful that more breweries in the industry will adopt this measure to ensure drinkers can be informed, confident, and stoked with their beer purchase.
